Get more out of your black tea

A common error when making black tea is to use water at too low a temperature. Add water at boiling point (100 °C or 212 °F) to black tea, as many of the flavours do not develop at temperatures below 90 °C. Bear in mind that lower temperatures are recommended for some more delicate teas and temperature will have as much of an effect on the final flavour as the type of tea used. Elevation of the crop and time of harvest offer varying flavours, proper storage and water quality also have a large impact on taste. A good policy is to warm the teapot before preparing tea in it. Do this by adding a reasonable quantity of boiling water to the pot, swirling carefully before discarding. Black teas are usually brewed for about 4 minutes and should not be allowed to stand for less than half a minute or more than five minutes. Once the tea has brewed long enough to suit the tastes of the drinker, strain the tea while pouring.
